Did you know Stevia is a lot sweeter than sugar? It’s a unique food ingredient which doesn’t add calories. It’s used as a sweetener alternative to sugar. Stevia is used in soft drinks, juices, jams, sauces and pickles. ‘Stevia’ has a good potential to grow in India since the plant is likely to grow well in tropical and sub-tropical regions.
Well, Stevia is actually a plant, a perennial herb that grows about 30 cm in height. A species called Stevia rebaudiana is naturally grown in Brazil and Paraguay, where it has been used for hundreds of years to sweeten foods and treat burns and stomach discomfort, according to a Live Science report. It has a slight bitter taste.
The fresh leaves are least sweet and the extracted white powder is the sweetest. Often dried leaves used as well.
The sweetness quality in Stevia is caused due to several glycoside compounds composing of Stevioside, Steviolbioside, Rebaudiosides A-E, and Dulcoside.
Chlorgenic acid reduces enzymatic conversion of glycogen to glucose in addition to decreasing absorption of glucose in the gut. Thus, it helps reduce blood sugar levels.
Stevia also contains, many sterols and antioxidant compounds like triterpenes, flavonoids, and tannins. Some of flavonoid polyphenolic anti-oxidant phyto-chemicals present in stevia are kaempferol, quercetin, chlorogenic acid, caffeic acid, isoquercitrin, isosteviol…etc. Studies found that kaempferol can reduce risk of pancreatic cancer by 23% (American journal of epidemiology).
It helps reduce and controls blood pressure levels
